I love to cook, but I am stuck in a cooking rut. It seems like I make the same 6 or 8 meals over and over. It also seems that every show (ie Rachel Ray, Martha, Today, etc.) has cooking segments where they make things that look good, but you have to buy special ingredients in order to make them. I want real tried and true recipes that are affordable, easy, not full of fat that can become part of my meal repertoire. I like meals that can be made from the basic things I usually have on hand (like stewed tomatoes, a jar of minced garlic, potatoes).
So if you have the time-- I'd love you to post your dinner favorites.
Here are a few of mine:
*Taco Soup*
If you can open cans you can make this soup.
1/2 onion, chopped
2 (16 oz) cans of beans, drained (kidney, black, pinto, whatever)
1 (16 oz) can of corn, drained (or 1 cup of frozen corn)
1 Lg (26 oz) can of stewed tomatoes
1 (16 oz) can of tomato sauce
1 envelope of taco seasoning
Saute onion in a little olive oil. Then add the remaining ingredients. Heat through. Serve with sour cream, shredded cheese, corn chips. You can add ground beef or diced chicken if you like.
*Pork Tacos*
To the crock pot add a pork roast of your liking (I usually buy boneless picnic roast-- it's cheap). Add a small can of salsa verde, 1/3 cup of orange, lime or lemon juice, 1/2 onion chopped, 1 tsp minced garlic, salt, pepper, and a few sprigs of fresh cilantro if you have some and cook on low about 6-8 hrs.
The meat tastes so good. I serve it with corn tortillas, black beans, lettuce, sour cream and all the other typical taco fixin's (cheese, avocado, lime wedges, salsa, tomatoes)
*Creamy Pesto*
1 tsp Olive oil
1 tsp minced garlic
1 brick of low fat cream cheese (or small container of the fat-free kind)
1 cup milk
1/4 c Parmesan cheese
2 tbs canned pesto or 1/2 envelope of pesto seasoning
Saute the garlic in olive oil. Then on low heat add the cream cheese, Parmesan and milk. Stir until smooth. Then add pesto. Serve over pasta. I put grilled or sauteed chicken and veggies like onions, red/green peppers, and zucchini on top.
*Eli's Favorite Soup*
aka Tuscan bean soup
1 onion, diced
1 tbs garlic, minced
2 cans white beans, drained
2 cans chicken broth
1 can evaporated milk
1 bag of ready to eat spinach, chopped
Salt and pepper
Saute the onion, garlic, and oil. Add the beans, broth and milk. Over medium heat bring to a soft boil, turn heat to low. Add spinach and salt and pepper to taste. Serve with crusty bread.

Yeah, your recipes looks great. Here are some of my favs:
CREAMY SALMON PASTA
1 lb bowtie pasta
2-3 c. whipping cream or half & half
1/2 c. parmesan
2 lbs. boneless skinless salmon
1 c. petite peas
Cook pasta for 1 min less than package directions. Drain & toss with oil. Heat saute pan to medium heat. Place salmon in pan & cover. Cook 2 minutes without touching fish. Add cream & reduce heat. Simmer without stirring. Allow salmon to cook thru in cream with no lid about 7-10 minutes. Add peas. Salt & pepper to taste. Simmer 2-3 more minutes. Gently stir in pasta & parmesan.
GOLDEN CTRUS BROILED CHICKEN
2/3 c soy sauce
2 cloves garlic, pressed
1/4 c orange juice
2 T lime juice
4 boneless chicken breast halves
Combine soy sauce, garlic & juices. Pour over chicken in large plastic bag. Turn bag over several times to coat. Marinate 20 minutes, turning bag over once. Broil chicken 5" from heat source for 8 minutes. Turn over, cook 6 minutes longer, or until chicken is done. Serve with rice & a veggie.
Besides those, there are always, Hawaiian haystacks, lasagna, taco salad, enchiladas, etc. Or check out internecipes.blogspot.com for other good ideas. Sites like allrecipes.com and epicurious.com have rating systems where people can review recipes--I've had good luck with them.

CHICKEN CURRY
Saute about 4 or 5 chopped up garlic cloves and 1/2 onion in oil or butter
Add chicken (however much you want) until cooked.. salt and pepper it while cooking and add 2 boullion cubes.
once the chicken is cooked.. add chopped up potatoes and carrots( once again however much you want.. usually 3-4 potatoes/3-4 carrots) and some water so it can boil a bit.. but not too much water.. add another 1-2 boullion cubes or salt/pepper to your tastebuds satisfaction ( : and then you can cover it until the veggies or soft.. and then add a can of evaporated milk... and let it thicken.. then enjoy!
Its really simple.. sorry the measurements and things aren't exact.. and eat over rice!

I made the Taco Soup tonight for dinner and it was a HUGE hit, Andrina ate every last bit of it!
PS- In addition to Crystal's comment about the Chicken Curry recipe, I make it all the time (it's Kevin's favorite meal) and we cut up all sorts of veggies and add that on top of everything, like a haystack. We also like to add sunflower seeds and raisins. My personal favorite to put on top is raisins, carrots, pineapple, sunflower seeds, and celery.
This recipe takes a lot of prep time due to all the cutting of the veggies but WELL worth it... and the leftovers are even better!!
Everything looks yummy and SO gourmet! I need to try these out, I also have about 8-10 things in heavy rotation! I'd share a recipe but all mine are tired same-olds I'm sure you have already. :)
